As with all my recipes, change it up to suit your own tastes. Less salt, more herbs, or vice versa, whatever pleases your palate. 😊

Homemade Italian Dressing

1 tbsp. dried oregano or 1/4 cup fresh, finely minced
1 tsp. sea salt
2 tbsp. minced garlic
2 tbsp. grated onion
1 tbsp.dried parsley or 1/4 cup fresh, finely minced
1/2 tsp. pepper
1 tsp. celery seed
2 eggs, beaten
2 tbsp. lemon juice
3/4 cup white or white wine vinegar
1-3/4 cups extra virgin olive oil
1/2 cup water

Using a stick blender or regular blender, whiz the eggs to beat them, then add all of the ingredients except the oil.

Pulse to combine everything.

Add the oil slowly while running the stick blender, food processor, or blender.

If using as a marinade and cooking sauce:

Pour into a bottle or jar, cap, and refrigerate until ready to use.

If using as a salad dressing:

Pour into a 2-quart sauce pot and cook over high heat, while stirring non-stop, until dressing comes to a boil. This will thicken the dressing. Remove from heat and let cool. If too thick, thin dressing with a little spring water.

Pour into a bottle or jar, cap, and refrigerate until ready to use.

Shake well before serving.
