Hey, y’all! I’ve got several recipes to share, but since I’ve started writing a new novel, it’s hard to find enough time in the day to get to my ever growing to-do list. Legion of Spice sent me several samples and the family has gone nutso over the dishes I’ve used them in. First was their Operation Everything Spicy. Y’all know I can’t do super spicy, but my guys sure can and they loved my Bacon-Wrapped Cream Cheese Jalapeño Poppers liberally dosed with OES mixed with the cream cheese. I used Garlic Head on Browned Butter Sautéed Shrimp. OhEmGee! So good. Wonderfully garlicky and perfectly seasoned. Delicious on a bed of angel hair pasta. 😊

But this post is about Garlic Head Home Fries. You can cook these in a frying pan or roast them in the oven. Either way is easy and makes a great side for any beef, chicken, or seafood entree. Also awesome for breakfast with any kind of eggs.

Garlic Head Home Fries

2-3 tbsp. light olive oil
3-4 pieces of bacon, cut into quarters
1 onion, sliced
4-6 potatoes, cut into bite-sized pieces
3 tbsp. Garlic Head seasoning, to taste
2 tbsp. paprika

Skillet directions:
Cook bacon pieces in oil over medium-high heat until almost done. Add onions and saute for a few minutes.

Stir in potatoes and seasonings. Reduce heat to medium and fry on one side without disturbing for 10 minutes.

Scrap potatoes up from the bottom of skillet and flip over. Fry on other side for about 10 minutes or until the potatoes are tender.

Oven directions:
Preheat to 425°F. Line a large jellyroll pan with aluminum foil.

Scatter bacon pieces and cook in oven until 3/4 done, about 15 minutes.

In a large bowl, toss onions, potatoes, and seasonings with oil. Spread around with bacon on the baking sheet.

Bake for 25 minutes. Remove from oven and carefully flip over. Continue baking another 15 minutes or so until potatoes are tender and crispy.
